- 1 Onion
- 2 Cloves of Garlic
- Small piece of Ginger
- (optional) 1/2 Chilli
- 500g Tomatoes (plum tomatoes work well)
- 1 Cup (175g) Red Lentils
- 1 Vegetable Stock Cube
- 1 heaped tsp Cumin
- 1/2 tsp Cayenne Pepper
Finely chop the onion, garlic, ginger and chilli (if desired). Roughly chop the tomatoes and wash the lentils
Fry the onion and garlic on a low heat for 5-10mins
Add the ginger, tomatoes, lentils, cumin and cayenne pepper (and chilli if desired) and stir well
Add 1.2 litres of boiled water and the stock cube. Turn the heat up to bring to the boil. Once boiling reduce heat and let simmer for 30mins.
Blend together and add salt and pepper to taste.
