Scrambled "Eggs"

Ingredients

  • 1 packet Tofu
  • 1 onion
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1 tsp Turmeric
  • 3 tbsp Vegetable Broth
  • Vegan Margarine

Note: Volcanic salt works best here as it has a higher sulphur content resembling eggs.

Method

Drain the tofu (I press between two plates for 5-10 minutes. This is faster if you stack more plates on top)

Melt some vegan margarine on a frying pan and fry sliced onion until soft

Add tofu and spices. Either crumble tofu into pan or break apart with the spatula to look like scrambled egg

Add the vegetable broth 1 tbsp at a time giving it time to fully absorb (This gives it a creamy texture).

Season with salt and pepper as desired. Serve with toast or as part of a full breakfast.
