- 1/2 cup Peanut butter
- 1/4 cup Icing Sugar
- 1/2 tsp Vanilla Extract
- 1/4 tsp Salt
- 1 1/4 cup Plain Chocolate Chips
- Optional: Chopped Mixed Nuts

In a mixing bowl mix together the peanut butter, icing sugar, vanilla and salt to form a soft dough.
In a double boiler (or heat proof bowl over a pot of boiling water- take care the bowl does not touch the bottom of the pot) add the chocolate chips and gently stir until the chocolate has melted.
Use cupcake liners and add enough chocolate to cover the bottom.
Take a piece of the peanut butter dough and form a disc which is a bit smaller than the cupcake liners (allowing chocolate to go around the edges). Place this peanut butter disc in the mould.
Pour chocolate on top to cover the sides and top.
Repeat until the peanut butter dough and chocolate is finished. This recipe should make about 10-12 large peanut butter cups.
Optional: Sprinkle some chopped nuts on top.
Put in the fridge to set (about 40 mins).
