A delicious and not-so-bad-for-you way to start a Sunday morning. This recipe is adapted from one shared by the amazing Minimalist Baker
- 1/2 Cup of Milk (Soya/ Almond/ Coconut)
- 1/2 Cup Flour
- 1 1/2 tsp Baking Powder
- 3 1/2 tbsp unsweetened Cocoa Powder
- Pinch of salt
- 1 tbsp Sugar
- 1 tbsp Vegetable Oil
- 1/2 tsp Vanilla extract
- 1 1/2 cups Cocount Flakes
- 1/4 tsp Vanilla extract
- 2-3 tbsp Coconut Milk
- 2-3 tbsp Icing Sugar
To make the Pancakes
Mix together all of the dry ingredients with a fork and ensure there are no clumps
Add in the wet ingredients and mix. Add a splash more milk if you like a thinner batter
Lightly grease a frying pan and keep on low heat
Pour on about 2 tbsp of batter. Flip when bubbles start to form on the surface and the sides begin to brown. Repeat on the other side
Spread filling on top of pancake and stack as desired.
To make the Frosting:
Blend together coconut flakes in a food processor until creamy.
Mix in vanilla and icing sugar
Add splashes of coconut milk while mixing to create a "butter" consistency.
