• 1 tbsp Olive Oil
  • 1 Onion
  • 2 cloves Garlic
  • 2-3 Peppers (different colours)
  • 250g Mushrooms (approx 1 packet)
  • Optional: small tin Cannellini Beans
  • 1 Fajita Seasoning (either use a packet or add 3/4 tsp cumin, 1 tsp paprika, 3/4 tsp salt, 3/4 tsp chili powder)
  • 6-8 Tortilla wraps
  • Optional Toppings: Refried beans, Salsa, Avocado, Vegan Cheese


Slice the onion, peppers and mushrooms thickly and mince the garlic

Heat the oil in a large skillet

Add the onion and cook for 2-3 minutes.

Add in the peppers, mushrooms, garlic and seasoning. Cook until vegetables just begin to soften-about 10 minutes. (Optional: add rinsed cannellini beans about 4 minutes before the end.)

Place tortilla wraps on a plate and heat in the microwave for 30 seconds. Alternatively wrap in foil and heat in the oven for 10 minutes at 180C.

Bring the skille to the table on a heat proof mat and build your own fajitas how you like them.
