Slice the onion, peppers and mushrooms thickly and mince the garlic
Heat the oil in a large skillet
Add the onion and cook for 2-3 minutes.
Add in the peppers, mushrooms, garlic and seasoning. Cook until vegetables just begin to soften-about 10 minutes. (Optional: add rinsed cannellini beans about 4 minutes before the end.)
Place tortilla wraps on a plate and heat in the microwave for 30 seconds. Alternatively wrap in foil and heat in the oven for 10 minutes at 180C.
