- 1 onion
- 1 clove of Garlic
- 1tsp Coriander
- 1 tsp Cumin
- 115g Mushrooms
- 1 can (425g) Red Kidney Beans
- 1 tbsp Parsley
- Flour for dusting
- Salt and Pepper to taste
Sweet Potato Chips
- 2 Sweet Potatoes
- Olive Oil
These burgers work well with a salad and in a burger bun, or can be served alongside some tasty sweet potato chips as shown here
Finely slice the onion and garlic. Finely slice the mushrooms. Wash and drain the beans.
Heat the oil in a pan and add the onion. Cook until soft (about 3 minutes)
Add the garlic, coriander and cumin and stir for a further minute.
Add the mushrooms and cook, stirring frequently until all the water has evaporated (about 5 minutes)
Put the beans in a bowl and mash with a fork
Mix the beans together with the mushroom mixture. Add salt and pepper to taste
Preheat the grill and separate the mixture into 4 even portions. Lightly dust with flour and shape into round patties.
Brush with oil and put under the grill for 5 minutes on each side.
Preheat the oven to 180C
Cut the potatoes into large chunky wedges
In a large bowl cover the potaoes in oil and paprika. Mix until wedges are well coated.
Put on a baking dish and cook in the oven until chips are soft (about 20 minutes).
